Tomato Soup

Tomato soup is my all-time favorite soup to make.  I love it paired with a grilled cheese sandwich.  Yum!

Serves 4 when accompanied by grilled cheese sandwiches and a salad

Ingredients:

  • 2 15oz cans tomato sauce
  • 2 tablespoons Tomato Soup Mix
  • 2 tablespoons water
  • 8 tablespoons ghee or butter
  • Salt to taste
  • Cheese (optional)
  • Heavy cream (optional)

Method:

  • In a pot on medium heat, add ghee or butter
  • In small bowl, add Tomato Soup Mix and 2 tablespoons of water and stir until it forms a paste
  • Add paste carefully to pot and stir until fragrant (less than a minute)
  • Add tomato sauce and stir until mixed
  • bring to boil then simmer until butter separates from the sauce
  • Salt to taste
  • When mixture starts to bubble, it is ready
  • Transfer to bowl and serve with grilled cheese sandwiches
