Palak Paneer is a kid friendly dish that is mildly spiced and so yummy!
I love it meatless, but if you prefer to add meat, that works too!

Serves 4 when accompanied with a salad and Basmati Rice
Ingredients:
- 16oz spinach leaves
- 2 tablespoons Palak Paneer Mix
- 2 tablespoons water
- 4 tablespoons ghee or butter
- 1 tablespoon tomato paste
- Salt to taste
- 8oz Paneer Cubes
- Heavy cream (optional)
Kitchen Equipment:
- Blender
Method:
- Rinse spinach leaves and then cook for 5-8 minutes in boiling water
- Stop the cooking process and preserve the vibrant green color by submerging in ice water
- Drain and set aside until cool
- Blend to a puree in blender
- In a pot on medium heat, add 4 tablespoons ghee or butter
- In small bowl, add Palak Paneer Mix and 2 tablespoons of water and stir until it forms a paste
- Add paste carefully to pot and stir until fragrant (less than a minute)
- Add tomato paste and stir for another minute
- Add spinach puree
- Salt to taste
- When mixture starts to bubble, it is ready
- Transfer to bowl and serve with naan and Basmati Rice
